The Combi Cooker integrates heated contact plates with controlled hot convection air and/or steam in one system, allowing surface roasting and core cooking to be managed within one integrated process. This creates a stable cooking environment where color development and moisture levels can be carefully managed. Sensitive products such as vegetable patties, pancakes, or poultry schnitzel can be cooked without losing their natural taste and appearance, while the contact heat provides an appetizing roasted surface and optional grill marks.

What Makes Our Combi Cooker Different

The Combi Cooker transports products between PTFE-coated upper and lower belts, where heated plates provide controlled contact cooking. At the same time, hot circulating air and/or steam is applied to ensure even heat distribution and climate control. Separate adjustable heating zones allow optimal color development and low moisture loss. Optional dew point control supports yield optimization, while sophisticated air guidance ensures uniform heat transfer across the belt width. This combined approach enables products to cook in their own natural fats without need for additional oil, supporting natural taste, appealing appearance, and controlled weight loss.

The Combi Cooker is built for stable and predictable performance in demanding production environments. The PTFE-coated belt system prevents belt marks on the product and minimizes product buildup, supporting consistent appearance and reduced cleaning interruptions. Operation is managed through an intuitive touchscreen interface with recipe management, allowing repeatable process settings and easy adjustment between products.
